When roasting coffee, what is referred to as the ‘first crack’ occurs when the moisture starts coming through the bean and as it expands, the crease grows. Heat is coming off the bean at this point and additional heat must be applied or the roast will stall. Where any good roaster earns their reputation is acting fast when the 2nd crack comes.B This is when the sugar carmelizes and the coffee picks up the best flavors.B The result is a solid cup of medium roast java!
